Powdered Milk

Another new month, and time to publish a monthly handout for ideas on using food storage or garden yields. This is the handout I provided for our sisters this month. It is amazing the things you can do with all the powdered milk you have stored and refuse to drink.

USING POWDERED MILK
Milk Conversion Chart
Milk Water Dry Powdered Milk
1 Cup 1 Cup 3 Tablespoons
¾ Cup ¾ Cup 2 ¼ Tablespoons
2/3 Cup 2/3 Cup 2 Tablespoons
½ Cup ½ Cup 1 ½ Tablespoons
1/3 Cup 1/3 Cup 1 Tablespoon
¼ Cup ¼ Cup ¾ tablespoon

When using any recipe calling for “milk“, add dry powdered milk to dry ingredients and add water to your wet ingredients.

Evaporated Milk
1 ½ C. water
½ C. + 1 T. dry non instant powdered milk
Combine ingredients and mix well before using in a recipe. Yields 1½ cups - the equivalent of a 12 oz. Can

Sweetened Condensed Milk
½ C. hot water
1 C. non instant dry milk
1 C. sugar
1 T. butter

Combine ingredients and mix thoroughly in blender. Use immediately or store in refrigerator or freezer.

Rice Pudding
1/3 C. rice, uncooked
1/3 C. sugar
3 C. evaporated milk ( 1 C. + 2 T. dry powdered milk + 3 C. water)
1-2 t. cinnamon to taste
1 tsp. Vanilla
Nutmeg
¼ C. raisins (optional)

Preheat oven to 350. Combine all ingredients except nutmeg and pour into 1½ quart baking dish. Sprinkle nutmeg over top. Bake for 1 hour to 1 hour 15 minutes, stirring every 15 minutes.

Easy Fudge
3 C. semisweet chocolate chips
1 can sweetened condensed milk (½ C. hot water + 1 C. sugar + 1 C. dry powdered milk + 1 T. butter, mixed thoroughly in blender)
1 ½ t. vanilla extract
2/3 C. chopped nuts, optional

In a heavy saucepan over low heat, melt chips in sweetened condensed milk. Remove from heat and stir in remaining ingredients. Spread evenly into an 8 inch pan lined with waxed paper. Chill in refrigerator for 2 to 3 hours or until firm. Turn fudge onto cutting board and peel off paper, then cut into squares. Store fudge loosely covered at room temperature.

I just have to say that I seriously appreciate all of the ideas and recipes that you post! In today's economy it is so essential to make your dollar stretch! Oh, and sweetened condensed milk is SOO expensive, this is a great cost cutter!! By the way, my mom is home form the hospital.
