Onion Obsession

I have decided that one of my new obsession is ONIONS. I just love sauteed onions. The other day I had a craving to make home made macaroni and cheese. I had made some hot dogs to go with it so obviously I grilled up some onions for the dogs. Now don't judge me. I realize mac and cheese and hot dogs don't sound like a healthy meal. I don't do this very often. Actually one of Alan's favorite meals is pork and beans and hot dogs. Or, pork and beans and fried eggs over easy, We don't do that very often either.
Any way, I sliced the onions real thin and sauteed them in some coconut oil ( I love that stuff). After dishing up and smothering my hot dog in onions, I put some on the mac and cheese. I have decided that is the ONLY way to eat mac and cheese now. YUMMY!

K, so I found a recipe for onion rings or as the creator of the recipe calls them, Onion Strings.
I just made them and thought I would take you on a journey through the process...

The assemble line. Soaked onion slices, flour and spices and hot oil.
This picture is to show proof that I actually waited for the oil to reach the degree called for. However, that was the last time it ever reached that high of a temperature. It kept dropping every time I put in a new handful of onions. I would wait forever for it to climb back up in between batches, but it never quite made it.

I wish I could be as excited about them now, as I was when I first started to make them. But you see I finished off that plate all by myself and now I am sick. Guess it's been awhile since I have had greasy food.
Onion Strings
1 large onion
2 cups Buttermilk
2 cups All Purpose Four
slightly less then 1 Tbsp of Salt
Black Pepper (lots)
1/4 to 1/2 teaspoon Cayenne Pepper
Slice onion very thin. Place in a baking dish and cover with buttermilk for at least one hour.
Combine dry ingredients and set aside.
Heat oil to 375 degrees
Grab a handful of onions, throw into flour mixture, tap to shake off excess, and plunge into hot oil. Fry for a few minutes and remove as soon as golden brown.

id say they were delish! I always seem to make pretty good timeing and come over when you are making one of your creations, either that or you are always making a creation of some kind! but im not complaining!

They look so good, and who cares if you eat mac and cheese, and hot dogs now and again!! I'm not judging - you should see what I eat sometimes! :)
