Here is a close up of my Saturday morning breakfast.

I woke up this morning and went to check my e mails. There was one from one of my favorite sites (Allrecipes.com). They were spotlighting a recipe of the day (Daily Dish). As I looked at it and read through the ingredients and all of the comments people left who had made it, I thought it sounded good. So off to the kitchen I went. Here is the actual recipe:
Breakfast Pies
3/4 pound breakfast sausage
1/8 cup minced onion
1/8 cup minced bell pepper
1 can refrigerated biscuit dough
3 eggs beaten
3 tablespoons milk
1/2 cup shredded Colby jack cheese
1. preheat oven to 400
2. cook sausage, onions and peppers then drain.
3. put dough into muffin tin. Covering the bottom and sides. Evenly distribute the sausage mixture into the muffin cups. Mix eggs and milk together then divide into the muffin cups. Sprinkle cheese on top of each one.
4. Bake at 400 for about 18 to 20 minutes.
I did happen to have one can of crescents, so I layered the muffin cups with that after I sprayed the inside with cooking spray. (I just automatically did it so it wouldn't stick. I don't know if it was necessary or not)
I had some bacon in refrigerator but didn't feel like cooking it. Also had some cubed ham in the freezer but was hungry now and didn't want to wait to defrost it. Didn't want to chop an onion or go out to the garden to get a bell pepper. So this is what I did...

I mixed some powder eggs and water in a bowl, added some real bacon bits (the kind in the bag), threw in some dehydrated onions, some salt and pepper a small diced boiled potato that I had in my refer, then added some mozzarella cheese. Mixed it all up and poured it into the dough muffin cups. Then baked them.
They were really good! Imagine the combination of things you could put into them. You could customize them to fit each persons likes and dislikes.
I suggest you try this real soon. They said that you could make them ahead, put them in the refrigerator and warm them in the microwave when you are ready to eat. An easy to take on the go meal in your hand.
